KIKU with minced meat filling from the wood-fired oven

  • 4 KIKU apples
  • 200 g minced beef
  • 200 g minced pork
  • 2 tbsp parsley, finely chopped
  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tbsp mustard
  • 3 tbsp panko breadcrumbs
  • 1 tsp salt
  • ½ tsp paprika
  • 100 g smoked bacon slices

Cranberry-apple sauce

  • 100 g cranberries from a jar
  • ½ tsp thyme leaves

Preparation:

Cut the KIKU apples in half crosswise and remove the cores. Scoop out the flesh, leaving a rim of approx. 1 cm. Roughly chop the apple flesh and set aside.

Place the apples in the prepared casserole dish. Combine the minced meat with all the ingredients in a bowl and knead well by hand until the mixture comes together. With wet hands, form 8 equal-sized balls. Fill the apples with the mixture and wrap each apple with bacon.

Cranberry-apple sauce

Purée the apple flesh with the cranberries. Add the thyme.

Baking

Place the casserole dish in the centre of an oven preheated to 220 °C and bake for approx. 15 minutes. Remove from the oven, serve with the cranberry-apple sauce and enjoy.

Potato sticks make a great side dish.
