Set aside.<\/li>\n<\/ul>\n\n\n\n<p><strong>Celeriac pur\u00e9e<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Peel the celeriac and cut into cubes.<\/li>\n\n\n\n<li>Cook in the milk with a little salt until soft.<\/li>\n\n\n\n<li>Blend finely with the olive oil until a smooth, pale cream forms. Keep warm.<\/li>\n<\/ul>\n\n\n\n<p><strong>Apple\u2013hazelnut crust<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Dice one apple finely and briefly saut\u00e9 in a little butter (about 30 seconds). Let cool.<\/li>\n\n\n\n<li>Roughly chop the hazelnuts.<\/li>\n\n\n\n<li>Mix with the diced apple, breadcrumbs, Parmesan, egg white, butter, salt, white pepper, and thyme.<\/li>\n\n\n\n<li>The mixture should be moist and easy to shape.<\/li>\n<\/ul>\n\n\n\n<p><strong>Apple reduction<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Peel the apple, cut into small pieces, and place in a small, narrow saucepan.<\/li>\n\n\n\n<li>Cover with water and cook until soft.
