Soup with KIKU apples, potatoes and marjoram

Soup with KIKU apples, potatoes and marjoram

Serves 4

  • 30 g chopped onion
  • 300 g peeled, cleaned and diced Kiku apples
  • 400 g peeled and cut potatoes
  • 40 g butter
  • ½ teaspoon of marjoram
  • 100 ml. apple juice
  • 600 ml. broth
  • 300 ml. cream
  • salt, pepper, fresh marjoram for garnishing

Preparation:
Brown the onion, the apples and the potatoes with butter in a saucepan.
Add the broth, the cream and the apple juice. Cook on a slow flame for 30 minutes. Season with salt and pepper. Mince the soup in the liquidiser and strain through a colander.
Pour the soup into the dishes and season with the fresh marjoram.
